Fermentation Générale is not your traditional bakery. Their focus is on offering the very best in fermented products, which are a source of wealth in our diet, providing both nutritional and taste benefits and preserving ingredients. While sourdough bread is one of their offerings, they also sell various other products, including Kombucha, Kefir, fermented vegetables, wines, ciders, beers, and Focaccia-style preparations.
All of Fermentation Générale's products are handmade without any added chemicals, stabilisers, or preservatives. They use the water from the artesian well of La Butte Aux Cailles in the 13th arrondissement, which is delivered by bike. Their shop is small but well-stocked, with an elegant wooden counter displaying their bread.
Their bread is all made from organic flour of peasant origin and is kneaded by hand using stone-ground flour. Their baker is trained at Terroirs d'Avenir and Bricheton, both solid references. They offer semi-wholemeal or wholemeal bread made from various flours, including population wheat, small spelt (einkorn), large spelt, rye, Roussillon bearded, and emmer. Their bread are generally available in two formats: a rounded rectangular loaf or a narrower cake. The fermentation process for their bread lasts at least 24 hours, allowing the dough to rise and the sourdough to act.
Their bread is delicious and high-quality, and their prices range from 9 to 22 euros per kilogram, depending on the flour and recipe and the majority of their bread is priced below 11 euros per kilogram.
